Preheat the oven to medium temperature
In a small saucepan, combine sugar, water, and cinnamon sticks
Bring to medium heat, stirring until the caramel turns golden brown
Remove from heat and pour into the tart mold

Cut peaches into wedges and arrange over the caramel
Cover with butter and puff pastry
Bake for 30 minutes or until the crust is golden brown
Remove from oven and invert the tart onto a plate
Serve warm peach tart with coconut ice cream.
