Cut the eggplants into 1 cm thick slices and then in half. Reserve

In a bowl, whisk together the egg and water
Gradually add the flour while stirring with a fork until a smooth and even batter forms
Add salt and mix well

Heat the oil in a pan
Dip the eggplant slice into the batter and fry until lightly golden
Drain on paper towels and serve with the sauce

Remove from heat and add the remaining ingredients
If desired, add salt.
