Prepare the batter: mix the egg with cold water and baking soda in a large bowl
Whisk flour into the egg mixture, stirring with a wooden spoon
The batter should be wet enough to flow off a spoon
If too thick, add more cold water
It's best to use it as soon as possible, and keep it cold until ready to fry
While preparing the batter, place the bowl inside another bowl filled with ice
Heat the oil in a deep frying pan
Dip fish and shrimp pieces into the batter, one at a time
Make sure not to leave any excess batter in the pan
Drian on paper towels and serve with tempura sauce that can be prepared ahead of time or at serving
Fry the dried fish pieces in boiling water
Bring to a boil, then remove from heat
Drain and set aside
Mix in grated ginger and chopped turnip greens
Then add soy sauce
Serve 4-6 pieces.
