Preheat the oven to 240°C (hot)
In a large frying pan, heat 2 tablespoons of olive oil over medium heat
Add the lime rind and garlic and cook while stirring until lightly browned
Add the bread crumbs and fry until golden brown
Set aside. Reserve
Place the remaining olive oil in a medium-sized baking dish or a refractory mold that can accommodate the tomato-berry in a single layer
Arrange the tomato-berry in the baking dish, drizzle with the olive oil, and sprinkle with salt
Bake for 10 minutes or until the tomato-berry is warm and the skin starts to crack
While this is happening, mix the bread crumbs with thyme leaves and salt
Sprinkle over the top of the tomato-berry
