Bring the water and butter to a boil
When it's hot, add the flour all at once, stirring vigorously until the mixture detaches from the sides of the pan, forming a ball
Remove from heat and add the eggs one by one, beating continuously until you get a smooth and shiny dough
Set aside
Cook the peeled sweet potatoes and pass them through a ricer to form a puree
To get the final mixture, mix part of the cold puree with two parts of the dough
Season lightly
Add plenty of oil
Using a spoon, let the mixture fall onto the spoonfuls of oil
They increase greatly in volume
Fry until they're golden brown
Drain on paper towels
Serve 6-8.
