Lettuce leaves cut into strips
Drain the tuna and chop it into pieces, reserving the oil
Put the reserved oil in a bowl and top with olive or oil
Beat the egg with lemon juice in a blender and, with the machine running, slowly add the bowl of oil in a thin stream, beating until thickened
Pour the beaten egg into a bowl and add the tuna and mustard
Mix well
Serve with crackers and black olives at room temperature.
