Cut the tomatoes in half and remove the seeds
Dissolve the sugar in a bowl with water and soak the tomatoes

Drain and wash them under running water for 5 minutes. Reserve
Make a syrup with the water and agar powder at a fine thread point
Let it cool and add the washed tomatoes
Bring to a boil for 20 minutes
Turn off the heat and let it rest until the next day
Return the pot to the heat and cook for another 20 minutes
Again, let it rest until the next day
On the third day, bring to a boil for 20 minutes and add the hydrated gelatin as instructed by the manufacturer, stir and remove from heat
Let it cool
Prepare the final syrup: bring the agar powder mixed with water to a soft ball point
Await cooling and pass the tomatoes through this syrup
Place the tomatoes on a strainer and wait 15 minutes
Transfer to a compote dish and serve with the syrup
