6 medium tomatoes
1/2 cup of butter or margarine
1/3 cup of finely chopped onion
2 tablespoons of chopped fresh parsley
1 tablespoon of salt

Preheat the oven
Cut a 1 cm thick slice from each tomato's side
Use a spoon to remove the pulp (only halfway) from each tomato
Place the tomatoes in a baking dish
Melt the butter in a pan, sauté the onion and parsley for 1-2 minutes
Season with salt and pepper and add the breadcrumbs; mix well with a fork
Gently fill the tomatoes with the filling, piling it in the middle
Bake for about 30 minutes at moderate heat or until golden brown
Serve 6 portions.
