6 firm medium tomatoes, peeled and chilled
1 1/2 cups of fresh papaya, diced
1/2 cup of toasted almonds, shelled and chopped
2 tablespoons of olive oil
2 tablespoons of lime juice

Cut a lid off each tomato from the stem side
Remove the pulp with a spoon, leaving the tomato sides 1/2 cm thick
Remove the seeds and chop the pulp; also chop the removed lids
Mix with papaya and almonds
Season with olive oil, lime juice, and salt
Mix well and fill the tomatoes
Serve in individual plates over lettuce leaves
