In a refrigerator, combine the rice, water, and one tablespoon of salt
Mix well, cover, and microwave on high for 11 minutes

Cut off the tops of each tomato, forming a lid
Reserve them

Remove the seeds and discard
Season the interior of the tomatoes with the remaining salt and pepper
Add the rice, cheese, parsley, and olive oil to the rice mixture
Stuff the tomatoes and cover with the lids
