Preheat the oven to high temperature
Cut the tomatoes in half lengthwise
In a large baking dish, place the tomato halves with the cut side facing up
Mix together the sugar and salt and sprinkle over the tomatoes

Bake for 1 hour
Turn the tomatoes, lower the temperature, and continue baking for another hour or until dry

Using a spatula, remove the tomatoes from the oven and let them cool down
If desired, drizzle with olive oil, vinegar, and minced garlic.
