4 medium-sized green tomatoes, seedless, cut into 0.5cm thick slices
Fry the bacon in a non-stick pan over medium heat until crispy (about 8 minutes)
Remove with a slotted spoon, drain on paper towels, and crumble
Add the olive oil to the pan and stir to combine
In a large bowl, mix together the flour, Parmesan cheese, salt, and black pepper
Heat the pan again over medium heat
While it's heating up, coat the tomato slices in the flour mixture, pressing gently to adhere
Fry half of the tomato slices until golden brown (about 1 minute per side)
Remove with a slotted spoon and place on a plate covered with paper towels
Repeat the frying process for the remaining tomato slices
Drain on paper towels
Transfer the fried tomatoes to a serving dish and sprinkle with crumbled bacon
Serve immediately.
