a few drops of lemon juice

Shape the steaks into balls as explained above
Season with salt and pepper
Fry quickly in a little oil or butter, until it reaches your desired point
Mix in the beef extract and hot broth
Add the lemon juice and mix well
Baste this mixture over the toasted bread slices
This serves to protect the toast from getting soggy when you place the meat on top
Garnish with parsley.
