Beat the eggs lightly, mixing together the yolks and whites
Season with salt and pepper
Melt some butter in the frying pan, pour a little bit of the melted butter onto the eggs and reheat the rest of the butter
Pour the eggs into the frying pan
When the mixture is solidified at the bottom (lift up the edge with a fork), poke it with a fork to make the top part well cooked
While the eggs are still moist but slightly set, fold the omelette in half, letting each side brown slightly.
