50g tomato paste, approximately
1 cup chicken broth or hot water
salt and black pepper to taste
3 fillets of anchovies, finely chopped
4 to 6 slices of Italian bread

Pound the chicken breast well or process it using a coarse grater
Fry the onion in butter or margarine until caramelized
Add the chicken and let it brown well
Add the white wine and continue frying until the liquid evaporates
Add the tomato paste and let it fry for a few more minutes
Add a little chicken broth and stir until you reach a thick consistency
Season with salt and black pepper to taste
Add the finely chopped anchovies
Stir well and serve over Italian bread cut into squares
Garnish with parsley, serves 4 to 6 people.
