Prepare the Hollandaise sauce, whisking together egg yolks and white wine
Heat it over low heat and whisk until smooth
Remove from heat and slowly add melted butter, continuously whisking
Season with salt and lime juice
Mix the sauce with remaining ingredients to taste, except Parmesan cheese
Sprinkle this over croutons with tempered sauce
Place in a hot oven for a few minutes to gratinate
These croutons are served alongside the couvert.
