1 kg of fine pork fat, preferably from the fattiest part
salt to taste
1 tablespoon of baking soda
1 tablespoon of vodka
2/3 cup of water

Cut the pork fat into strips about 1 finger thick and 3 inches long
Season with salt, baking soda, and vodka
Heat the water in a pot and add the pork fat
Let it cook until the water is gone and the pork fat has browned
Remove from heat
Drain well through a strainer and reserve the drippings
When serving, reheat the drippings and fry the pork rinds until they're crispy
Place on paper towels before serving
Serve hot, garnished with 10% or so.
