For the basic cookie dough:
1 package of your preferred cookie - Maria, chocolate, coconut (200g)
1/2 cup melted butter (100g)

4 large egg whites
1 cup unsalted butter, softened (180g)
3 tablespoons instant coffee
1 tablespoon unflavored gelatin, white
1 1/2 cups milk (360ml)
1 teaspoon vanilla extract
4 egg yolks

PREPARE THE COOKIE DOUGH: Preheat the oven to 350°F (medium)
Crumble the cookies in a blender
Add the melted butter and mix well
Press the mixture into the bottom and sides of a removable pan, 9 inches in diameter
Bake for 10 minutes, then let cool before filling
PREPARE THE FILLING: In a medium saucepan, combine the egg yolks, half the sugar, coffee, gelatin, and milk
Whisk well and bring to a simmer over medium heat, whisking constantly until it thickens slightly
Remove from heat, stir in vanilla extract
Place the saucepan over an ice bath, whisking constantly until the mixture cools and thickens
Beat the egg whites until they form stiff peaks
Fold in the remaining sugar and coffee, beating well to stiff peaks
Pour into the prepared pan and refrigerate for at least 4 hours or until set
