Make a caramel sauce with the sugar and water. Reserve
Scoop out the seeds and pulp from the pumpkin
Distribute the caramel sauce at the bottom of a pie dish and arrange the pumpkin so that it's completely covered by the sauce
Drizzle with the orange juice
Beat the egg whites until stiff and add the yolks, one at a time, without stopping to beat
Add the all-purpose flour and butter, beating until just combined
Pour over the pumpkin and bake in a medium preheated oven until golden brown
Allow to cool before serving.
