PREPARE THE BASIC BISCUIT DOUGH
Reserve the baked dough in a pan
PREPARE THE FILLING: In a medium saucepan, whisk together flour, milk, egg yolks, and sugar
Bring to a simmer over medium heat, stirring constantly, until thickened
Remove from heat, cover with plastic wrap pressed onto the cream, and let cool
Spread over the reserved dough and top with fruits arranged decoratively. Reserve
PREPARE THE COATING: In a small refractory bowl, sprinkle gelatin over water and let hydrate for 5 minutes
Bring to a boil in a bain-marie and stir until dissolved
Remove from heat, add sugar, whisk well, and let cool until slightly thickened
Spread with a brush over the fruits
Chill in refrigerator for about 2 hours or until coating is firm
Remove ring from pan and serve
