Beat the egg whites with salt
In a bowl, mix together almond flour, sugar, and cocoa powder
Fold in the egg whites gently
Place in the prepared pan
Bake in a preheated oven at 180°C for 20 minutes
Let it cool, unmold, cut into three rectangular pieces, and reserve
In a saucepan, combine heavy cream, milk, pepper, and chocolate chips
When boiling, turn off the heat, add softened butter, and stir
Refrigerate for 20 minutes
Blend in a blender for three minutes
Assembly
In the same rectangular pan, lined with plastic wrap, alternate the reserved pieces and the cream
Refrigerate until set
Unmold and decorate with shaved chocolate and candied cherries.
