Prepare the crust according to the recipe, but reserve 2 tablespoons of the mixture to sprinkle on top
This is a crucial step to create the perfect ice cream pie
Beat the egg whites until they become frothy, then add in the sugar, 1 tablespoon at a time
Beat until stiff peaks form
Beat the egg whites again until they thicken
Add the beaten egg whites to the mixture
Beat the whipped cream in chantilly or use canned whipped cream without syrup
Add this mixture to the previous one along with the lemon juice and grated lemon zest
Pour the mixture into the prepared crust
Sprinkle with reserved crumbs, place in the freezer until firm, then remove 15 minutes before serving.
