One cup of sugar
1/4 cup of cornstarch
1/4 teaspoon of salt
1 and 3/4 cups of boiling water
Two egg yolks
1/3 cup of lemon juice
One tablespoon of grated lemon zest
One tablespoon of butter or margarine

Mix the sugar, cornstarch, and salt; gradually add the boiling water and cook over low heat, stirring constantly, until thickened
Cover the saucepan and let it cook for 15 minutes
Beat the egg yolks and pour them into the mixture while still hot, stirring constantly
Let it cook for an additional 5 minutes
Just before removing from heat, add the lemon juice, grated lemon zest, and butter
Mix well and let cool
Pour into a cake pan, cover with meringue, and follow the recipe for baking.
