For the dough
1 1/2 cups all-purpose flour
1/4 cup unsalted butter, cut into small pieces
1/2 cup cold butter, cut into small pieces

2 tablespoons cornstarch
1 cup milk
1/3 cup confectioners' sugar
1 tablespoon lemon juice
1 tablespoon unsalted butter, melted

6 slices of bread, cut into small pieces
3 tablespoons unsalted butter
1/2 cup chopped nuts
1 teaspoon grated orange zest
1/2 teaspoon salt

2 tablespoons unsalted butter
2 mocha cakes, cut into small pieces
2 cups whipped cream

For the glaze
2 tablespoons unsalted butter
2 mocha cakes, cut into small pieces
2 cups whipped cream
Mix the flour, confectioners' sugar, and cold butter with your fingers until a crumbly mixture forms
Add 3 tablespoons of water, mix, and knead lightly
Bake in a preheated oven at 180°C for 20 minutes
Remove from the oven and let cool
Remove the parchment paper and continue baking for another 15 minutes or until golden brown
Remove from the oven and let cool completely
Prepare the cream: mix all ingredients except the egg white, then bring to a boil, stirring constantly
Remove from heat and let cool slightly
Avoid lumps by whisking in the egg white slowly while the mixture is still warm
Remove from heat and let cool completely
Prepare the topping: fry the bread slices in unsalted butter until both sides are golden brown
Pulse in a food processor with the nuts, confectioners' sugar, and grated orange zest
Set aside
Prepare the glaze: melt the unsalted butter and fry the mocha cakes on both sides until soft and pliable
Whisk in whipped cream until smooth and melted
Dust the cooled cake with the topping, arranging the mocha cakes decoratively
Serves 15 people
