1 cake mix
1 cup of vanilla pudding mix
1 cup of milk
1 cup of buttermilk
1 can of passion fruit in syrup
1 tablespoon of cornstarch
1 tablespoon of lemon juice
1/4 cup of shredded coconut
1 cake mix

1 cup of milk

1 can of passion fruit in syrup

Prepare the cake mix according to one of our above recipes
Poke holes with a fork and bake in a hot oven for 15 minutes
Let it cool down
Mix the pudding with milk, buttermilk, in a medium bowl
Cook according to package instructions
Pour into the cooled cake
Let it rest for 5 minutes or until firm
Drain the syrup from the passion fruit and reserve
Cut the passion fruit into chunks and arrange on top of the pudding in the cake
Mix 2/3 cup of the passion fruit syrup, gradually, with cornstarch in a small saucepan
Cook, stirring constantly, until the mixture thickens, and simmer for 3 minutes
Add lemon juice
Let it cool slightly
Place on top of the passion fruit, at the spoonfuls
Refrigerate and, just before serving, garnish with shredded coconut
