Prepare the crust: mix the flour with the butter and gradually add the biscuit crumbs
Forge the crust into a 20cm diameter mold, pressing the sides and bottom of the mold well
Let it chill in the refrigerator for 2 hours
Preheat the oven to 180°C (moderate)
Make the filling: In a bowl, mix the flour with the cream cheese until smooth
Beat the eggs well and add them to the cheese mixture
Add the vanilla extract and lime zest
Beat the egg whites until stiff peaks form
Mix in the cheese mixture
Place it on the prepared crust
Bake for 40 minutes or until the filling rises in the center
Remove from the oven and let it cool
Chill until serving time
Prepare the guava syrup: Cut the guavas in half, remove the seeds, and reserve the pulp
Mix in a little water and strain through a sieve
Reserve the juice
Cut the guavas into strips and reserve
In a saucepan, combine the flour, water, and guava juice
Bring to a boil over medium heat, then reduce heat and simmer for 10 minutes, removing the scum that forms
Add the lime zest and guavas
Simmer for another 5 minutes, stirring occasionally
Let it cool and serve with the chilled cake
