Ingredients
2 1/2 cups all-purpose flour
3/4 cup cold unsalted butter, cut into pieces
1 tablespoon salt
8 tablespoons cold water
1 egg, for brushing

3 cups ricotta cheese, crumbled
Salt and black pepper to taste
1 1/2 cups prosciutto, cooked and diced
2 cups cooked eggs, diced
4 eggs,
2 tablespoons fresh basil
1/2 cup pitted black olives, sliced

23 cm diameter round baking dish greased with oil

Preparation
Combine the flour, butter, and salt until a crumbly mixture forms
Add the water, mix well, and shape into a ball
Wrap in plastic wrap and refrigerate for 20 minutes
Filling
Mix the filling ingredients together and set aside
Assembly
Preheat the oven
Set aside some of the dough to decorate and open the rest
Line the bottom and sides of the baking dish
Fill with the filling
Open the reserved dough, create the decoration over the filling, brush with egg and bake for 40 minutes or until golden.
