In a bowl, combine the flour, butter, sugar, and salt
Mix with two forks (like you're cutting) until it forms a crumbly mixture
Make a depression in the center and add the water and egg yolks
Mix with a spoon, making circular motions from the inside out
Place on a smooth surface dusted with flour, and knead lightly until it becomes a homogeneous mass
Open 1/3 of the dough over the bottom of a 26 cm diameter cake pan
Cut off any excess dough around the edges with a knife
Place the side of the cake pan
With the remaining dough, form a rope and place it all around the edge, close to the border
Stretch the dough with your fingertips to cover the sides
Cover with plastic wrap and fill with uncooked rice or beans
Bake in a preheated oven at 200°C for 25 minutes
Remove the plastic wrap and continue baking for another 15 minutes, until golden brown
Let it cool, then fill and serve when ready to be removed from the mold
