300 g of frozen puff pastry, thawed

3 cups of leftover rice
100 g of grated mozzarella cheese
1 defatted sausage, finely chopped

Pulse the rice in a processor until it forms a consistent paste
Add the mozzarella and half of the chopped sausage
Assembly: In a removable tart pan with a 25 cm diameter, cut out a disk of equal diameter from the thawed puff pastry and line the bottom of the pan
With the remaining pastry, cut strips and line the sides
Dust with biscuit flour and spread the rice mixture
Decorate with sausage slices
Refrigerate for 20 minutes
Remove and bake in a medium oven for 40 minutes
Unmold while still warm and decorate with parsley
Tie the pastry edges with twine and serve immediately.
