3 Egg Whites
1 Pinch of Salt
3/4 Cup unsalted Butter (135g)
1 tablespoon Vanilla Extract
1/4 Cup confectioners' Sugar (25g)
1/2 Cup chopped Nuts (80g)

1 cup Bittersweet Chocolate, broken into pieces (180g)
2 tablespoons Strong Brewed Coffee
2/3 Cup unsalted Butter (130g)
1 Egg Yolk
1 tablespoon Rum
1/3 Cup confectioners' Sugar (50g - for dusting)

For the Filling

Preheat the oven to 350°F (180°C)
Butter and flour two 9-inch tart pans with removable bottoms. Reserve
Make the Meringue: In a stand mixer, beat the egg whites until stiff peaks form
With the mixer still running, gradually add the confectioners' sugar in 1/2-cup increments until you've used up 1 cup of sugar
Beat until the meringue is firm and holds its shape
Add the vanilla extract and continue beating until smooth
In a separate bowl, whisk together the remaining flour, confectioners' sugar, and chopped nuts
Add to the meringue mixture and mix gently to combine
Divide the mixture evenly between the reserved tart pans
Bake in the preheated oven for about 35 minutes, or until the meringues are dry
Remove from the oven and let cool
Make the Filling: In a heatproof bowl set over simmering water (do not allow to boil), melt the chocolate, stirring gently
Add the coffee and continue stirring until smooth
Remove from the heat and let cool
In a stand mixer, beat the butter until creamy and light
Add the reserved chocolate mixture, egg yolk, and rum
Mix well
Place one of the cooled meringues on a serving plate and spread with the filling
Top with the second meringue, dust with confectioners' sugar, and refrigerate for at least 1 hour
Serve chilled
