Dissolve the chocolate and butter in a double boiler
Beat the yolks, sugar, and orange zest in an electric mixer until foamy
Add the cornstarch, yeast, and flour, sifted, and mix well
Melt the chocolate into the mixture and stir
Beat the whites in an electric mixer with a pinch of salt and add to the batter
Pour the mixture into 4 buttered and floured molds (fill halfway)
Place a slightly dusted egg yolk on top of each one
Bake in a preheated oven at 350°F for 25 minutes
Let cool and decorate with ground pistachio.
