For the dough
1 1/2 cups all-purpose flour (180 g)
1 teaspoon active dry yeast
1 pinch of salt
1/3 cup unsalted butter, cut into small pieces (65 g)
5 tablespoons cold water
For the filling
3 medium-sized red meringues (450 g), without shells, cut into 2 cm cubes
1/2 cup confectioner's sugar (90 g)
1 tablespoon all-purpose flour dissolved in 1/2 cup cold water (120 ml)
2 tablespoons lemon juice
1/2 teaspoon ground cinnamon
All-purpose flour (for dusting)
One egg white, slightly beaten (for brushing)
One liter of oil (for frying)

Prepare the dough: in a large bowl, combine the all-purpose flour with the active dry yeast and salt
Add the butter and mix with the fingertips until a crumbly mixture forms
Add the cold water and knead lightly with your hands
Form a ball with the dough
Wrap it in plastic wrap and reserve at room temperature
Prepare the filling: in a small saucepan, combine all the ingredients and cook over low heat, stirring, until slightly thickened (approximately 6 minutes)
Let it cool
Dust a clean surface lightly with all-purpose flour
Roll out the dough to about 1/8 inch thickness
With a knife or pastry brush, cut it into eight 15 cm squares
With a spoon, distribute the filling among them
Brush the edges of the squares lightly with the beaten egg white
Fold the dough over the filling, pressing the edges together with your fingers
Tighten them well with a fork
Heat the oil in a medium saucepan over high heat
Brush the fried meringue cakes with the beaten egg white
Fry them, two at a time, in hot oil until golden brown (approximately 2 minutes)
Remove with a slotted spoon and let drain on paper towels
Transfer to a serving dish and serve
