Core the ciders and remove the seeds
Grate with skin on
Bring to a boil, together with 1 tablespoon of salt
Drain into a strainer lined with a napkin
Tie the ends and place the bundle in a large bowl filled with cold water
Rub occasionally to remove bitterness, and change the water twice a day
After 3 days, bring to a boil, combining equal parts of cider and sugar
Add cinnamon and cloves and let it cook until well done and the bottom of the pan appears
Place the mixture on an oiled plate
Let it cool and shape into rinds
Garnish with green leaves.
