8 slices of smoked turkey breast
1/2 cup grated zucchini
1/2 cup grated yellow squash
1 stalk celery, finely chopped
2 tablespoons corn
1/2 cup light mayonnaise
1/2 cup plain low-fat yogurt
4 to 5 fresh parsley leaves
Salt, olive oil, and black pepper to taste
8 slices of smoked turkey breast

Combine zucchini, squash, celery, corn, and mayonnaise in a bowl
Mix well with the yogurt, being careful not to overmix
Season with salt and pepper, then sprinkle with chopped parsley
Open up the turkey breast slices and place a small amount of the filling in the center of each one
Fold the sides of the slice towards the center to form a roll, and secure with toothpicks
Refrigerate for 1 hour
Serve by drizzling with olive oil
