1 1/3 cup of all-purpose flour (200 g)
salt
2 tablespoons of olive oil
1/3 cup of warm water
1 tablespoon of chopped cilantro
3 comari peppers, diced
2 green scallions, chopped
150 g of fresh Minas cheese
2 large egg yolks
oil for frying
Mix the flour and salt
Mix the olive oil and warm water, then slowly pour into the flour while beating well
This can be done in a processor or blender
Combine the pieces, shape into a flat ball, wrap in transparent plastic wrap, and reserve
Add the chopped cilantro, pepper, and green scallion
Add the grated cheese and egg yolks
Beat in a processor or blender
Use a cookie scoop to drop balls of dough onto a surface lightly dusted with flour, forming 10 cm circles
Place 1 tablespoon of filling in the center and lift all the edges to form a roll, pressing tight to seal
Place the rolls on a baking sheet lined with parchment paper and cover with a clean cloth
At this point, the rolls can be frozen for up to 1 month and fried later
Heat enough oil to have a depth of about 7 cm
Fry the rolls in batches until golden brown, about 2 minutes per roll
Drain on paper towels
Use warm green scallion strips to tie the rolls
Serve in about 28 pieces.
