Melt the chocolate with heavy cream over a water bath
Mix until smooth and let cool slightly
Add the crushed candies, mixing delicately
Refrigerate for three hours or until firm enough to shape
Shape the truffles using two spoons, transferring the mixture from one spoon to another
Repeat this process four times without overworking
Place the shaped truffles on a surface lined with parchment paper
Coating
Grate the chocolate and place it in a microwave-safe bowl
Microwave for 2 minutes and 20 seconds, at medium power
Stir the chocolate halfway through to ensure even heating
The chocolate should be smooth and pliable
Dip the truffles in the melted chocolate, letting excess chocolate drip off., then roll them in grated white chocolate
Place on a surface lined with parchment paper and refrigerate for about three minutes to set
Sprinkle with additional grated white chocolate and serve.
