A recipe for fish in wine
6 small trout or pike, each about 180-200g
4 green scallions
80g of butter
1/2 liter of white wine
100g of small, fresh mushrooms
1 cup of cream
1 tablespoon of chopped parsley
1 lime
salt and pepper to taste

Rinse and clean the fish
If using fresh mushrooms, remove the stems and squeeze with lime juice; place in a pan with 1 tablespoon of butter, salt, and pepper
Add enough water to cover
Let it simmer for 2 minutes. Reserve
Pulse the green scallions and place at the bottom of a pan
Heat with a little butter until lightly browned
Place in a refrigerator dish
Put the fish on top
Mop with white wine
Add cooked or canned mushrooms
Sprinkle with salt and pepper
Cover with aluminum foil and bake in a preheated oven for 20 minutes
Remove the fish from the dish and place in a serving platter
Add the mushrooms
Pour the sauce that remained in the dish into a pan and let it simmer until reduced
Add cream
Remove from heat, add 1 tablespoon of butter, and mix well for some time
Serve with the sauce over the fish and garnish with mushrooms.
