500 g of fava beans
For the dough
1/3 cup of milk (80 ml)
1 cup of all-purpose flour (120 g)
2 tablespoons of vinegar
3 eggs
1/2 teaspoon of active dry yeast
1 teaspoon of salt
2 cups of oil (480 ml) for frying
1/4 cup of grated Parmesan cheese (25 g) to sprinkle

Trim the ends of the fava beans and discard them
Cut the fava beans in half and reserve
Prepare the dough: In a medium bowl, mix all the ingredients with a wooden spoon until you get a homogeneous mass. Reserve
Heat the oil in a large pan over high heat
Join two halves of fava beans and coat them in the dough to form a ball
Repeat the process with the remaining fava beans
Dip in the oil and fry until golden brown (2 minutes)
Remove with a slotted spoon and let excess oil drip over paper towels
Transfer to a serving dish, sprinkle with Parmesan cheese, and serve immediately
