For the vinaigrette:

1/2 tablespoon Dijon mustard
salt and black pepper to taste

Wash and slice the zucchini, tomato, and onion into wedges
Prepare the marinade: whisk together 2 tablespoons of olive oil with the apple cider vinegar, Dijon mustard, and seasonings until smooth
Add the remaining olive oil slowly, whisking well
Place the vegetables in a bowl and cover with the marinade
Let it sit for at least 1 hour in the refrigerator, stirring occasionally
If desired, sprinkle with grated Parmesan cheese or serve on a bed of lettuce
Serve chilled.
