Preheat the oven to a very high temperature
Wash the fish and pat it dry
In a refractory dish or a baking dish large enough for the fish, spread 1 kg of coarse salt
Place the fish and cover with the remaining salt
With your hands, press the salt firmly onto the fish
Bake for 45 minutes or until the salt is firm
Remove from the oven and, carefully, break the crust of salt, discarding it along with the fish skin
Serve accompanied by olive oil and lemon.
