1 cup of chopped shallots

2 1/2 cups of peeled and thinly sliced potatoes (400g)

In a large pot, cook the shallots and onion in butter until they're soft
Don't let them brown
Add the potatoes, 2 2/3 cups of water, chicken bouillon, and salt
Bring to a boil
Reduce heat, cover the pot, and simmer for 30 minutes or until the potatoes are tender
Remove from heat and let it cool slightly
Blend the mixture in a blender or processor, adding half at a time
Return the mixture to the pot, add milk, and adjust seasoning
Let it cool and refrigerate
Serve chilled
