Remove the thyme from its stems and place it in a 1-liter jar filling to 3/4 capacity
Heat the vinegar to a boil and fill the jar
Let it rest for one to two weeks
Strain into bottles and seal well, or leave whole thyme sprigs in the vinegar bottle
Make 1 liter.
