In a skillet, combine the onion, beans, eight tablespoons of butter, and cook over medium heat for 8 minutes or until the beans are tender
Season with salt
Add the lemon rind, cornmeal, and mix well
Cook, stirring occasionally, for an additional 10 minutes. Reserve

In another skillet, combine the remaining butter and cook over medium heat until melted
Add the eggs and fry until they start to set
Mix quickly and add the parsley
Combine the cooked eggs with the cornmeal mixture and mix well
Check the seasoning and serve immediately.
