Cream:
2 cups grape juice
1 cup water
3/4 cup sugar
3 tablespoons all-purpose flour
4 balls of your preferred sorbet

Place 1 ball of sorbet inside each vol-au-vent and cover with the cream made as follows: mix all ingredients in a saucepan and cook over low heat until thickened
Serve 4 portions.
