Cream

1/2 cup (chalice) of sugar
1/2 teaspoon or drops of vanilla extract to taste
1/3 cup (chalice) plus 2 tablespoons of sweet wine (Marsala)
1 and 1/2 cups (chalice) of marshmallow
1/4 cup (chalice) of water
For the marshmallow
1 cup (chalice) of water
360 grams of sugar
4 egg whites
A pinch of cream of tartar
Cream

A pinch of cream of tartar
Make the marshmallow: boil the water with the sugar to form a syrup at medium thread stage
Beat the egg whites in snow with the cream of tartar, slow down the speed, and pour the hot syrup into the mixer while it is still warm
Continue beating until cooled. Reserve
Make the cream: put the egg yolks, sugar, vanilla, and wine in a bowl and place it over boiling water
With an electric mixer, beat this mixture over boiling water until it thickens
Add the marshmallow and water without stopping to beat, until the desired consistency is reached
Serve dusted with chocolate.
