2 tablespoons grated lemon zest
5 tablespoons freshly squeezed lemon juice
1/2 cup sherry, Madeira or Porto wine

Beat the egg yolks lightly
Add remaining ingredients
Cook in a water bath, stirring constantly until it thickens to a creamy consistency
Remove immediately from the water bath
Serve hot or cold in cups
Divide into 4 portions.
