3/4 cup granulated sugar
3/4 cup Marsala wine

Mix the ingredients and place in a bain-marie
Cook over hot water, beating constantly, for about 10 minutes or until thickened
Serve immediately in cups
Dose 4 to 6 servings
If desired, serve chilled, following the above recipe, so that when removing from heat, place the bowl over a bucket with crushed ice and beat until the zabaglione is cold
Place in cups and refrigerate until serving time.
