Beat the whites until they become frothy and pale
Add the salt and milk, then beat well
Beat the yolks until they thicken slightly
Fold them carefully into the whites
Heat a 9-inch non-stick skillet over low heat until it's hot
Pour in the egg mixture and cook slowly
Transfer to a moderate oven for about 5 minutes, or until the top is firm
Cut a shallow slash in the center
Place the bananas and jam on one half
Fold the other half over, then transfer to an warmed plate
Dust with cinnamon, serve warm, and repeat 2-3 times
