3 cups (1/2 kg) of cod, cut into small cubes

Fry the onion in olive oil until it starts to brown
Add the cod, cover the pan, reduce heat and cook for 5 minutes
Remove from heat and add salt and pepper
Mix well. Reserve
Beat egg whites into a froth, then add yolks one by one
Beat well
Add milk, mix and combine with cod
Mix well
Place in a round refractory mold
Dust with grated Parmesan cheese and bake in a moderate oven (170°C) for 20 minutes
