Remove the cabbage head and cut it into regular pieces of 2 cm thickness
Place in a bowl, sprinkle with sugar and cover with water
Let it rest for one day to another
Remove from the water, dry well and puncture with a fork
Pour boiling water over it until it's covered
Let it rest for 10 minutes
While that happens, prepare the broth
In a large pot, mix well the crystal sugar with water
Bring to boil and stir only until the sugar dissolves
Leave to boil for 2 minutes
Add the cabbage pieces and leave to boil for 10 minutes or until tender
